Ants clumbing trees (ou fourmis grimpant aux arbres)
J'aime la cuisine asiatique en général, le mélange des épices, l'odeur caractéristique de la coriandre (mon herbe fétiche).....A Bordeaux j'avais la chance d'habiter juste à côté d'Eurasie, super magasin Oriental où l'on trouve je pense à peu prés tout (le thé, le riz, les nouilles, les épices, les mélanges pour les rhums.....). Malheureusement ici à Kelowna c'est un peu plus difficile surtout quand on dépend entièrement du bus. Mais à force de persévérance on finit par y arriver. La recette que je vous propose est tirée de l'excellent livre "The Food of China a journey for food lovers" aux éditions Whitecap . Recette originale donc en anglais.
For 4 personns
125 g minced pork or beef
1/2 teaspoon light soy sauce
1/2 teaspoon rice wine (or rice vinegar)
1/2 teaspoon roasted sesame oil
125 g bean thread noodles
1 tablespoon oil
1 onion finelly chopped
1 tablespoon finely chopped ginger
1 garlic clove finely chopped
1 teeaspoon chili bean paste
SAUCE
1 tablespoon light soy sauce
1 tablespoon rice win
1/2 teaspoon salt
1/2 teaspoon sugar
1/2 teaspoon roasted sesame oil
250 ml (1 cup) soup cub
Combine the minced meat with the soy sauce, rice wine and sesame oil. Soak the bean thread noodles in hot water for 10 minute, then drain.
Heat a wok over high heat, add the oil and heat until very hot. Stir-fry the minced meat, mashing and separating it, until it changes colour and starts to brown. Push the meat to the side of the wok, add onion, ginger, garlic clove and chili paste and stir-fry fir 5 seconds or until fragrant. Return the meat to the centre of the pan.
To make tha sauce, combine all the ingredients. Add the sauce to the meat mixture and toss lightly. Add the noodles and bring to be boil. Reduce the heat to low and cook for 10 minutes, or until almost all the liquid has evaporated.
